因看了Masa的书才发现到,铺在烤焗饭/意粉上的那种“白酱”,原来那么容易做!而且,成本竟然还那么低!真的不应该再偷懒使用罐头装的浓汤取代了。
有时间的话,还可以把白酱当成帆布,制作出各种造型的烤焗饭/意粉呢!
比如说,龙猫焗意粉:
totoro baked pasta |
或是未加上芝士的吉蒂猫烤焗饭:
Hello Kitty baked rice |
甚至是加了芝士的史努比焗马铃薯:
Snoopy baked potato |
总而言之,“白酱”并没有想象中难做。重要的是,妹妹因吃了自家做的白酱意粉后,竟开始喜欢上吃意粉了。这还真的是意外的惊喜呢。
必备材料 basic ingredients:(serving size: 4 pax)
1. 盐、白胡椒 salt and white pepper to taste2. 无盐牛油 unsalted butter 25g
3. 牛奶 milk 400ml
4. 低筋面粉 cake flour 25g
做法 method:
1. 牛油以小火融化后,加入过筛的低筋面粉,以小火混合直至冒出小泡泡为止。after melting butter over small flame, add sifted flour and mix til small bubbles forming.2. 熄火后加入冰牛奶。用打蛋器搅拌好转中小火。off the fire and add in cold milk. mix well with egg beater and switch to medium-small flame.
3. 不时以打蛋器搅拌至产生稠度后熄火,加入盐、白胡椒调味。continue to mix with egg beater til sauce has become creamy and stiff. off flame and add salt and white pepper to taste.
白酱做太多了,怎么办?没关系。将剩余的白酱置于冷冻库中可保存一个月左右。需要用的时候拿去微波个5-10秒即可使用了。
